Ingredients
- One box of cooked Rotini Pasta
- Boneless skinless chicken breasts (2 or 3)
- One container of red cherry tomatoes
- One can of sliced black olives (3.8 ounces)
- Eight ounces of sliced pepperjack cheese
- Eight ounces of sliced cheddar cheese
- One package of mini pepperoni
- A half cup of diced white onions
- A half cup of diced green bell pepper
- One bottle of your favorite Italian dressing
- Three tablespoons of Parmesan cheese
- Two tablespoons of chopped parsley
Instructions
- Preheat your oven to 350 degrees
- Lightly season the boneless skinless chicken breasts
- Rub about 2 teaspoons of vegetable oil over the chicken
- Poke the chicken breasts on both sides with a fork to tenderize
- Wrap each chicken breast tightly with aluminum foil
- Cook the chicken breasts for 30 to 40 minutes
- First, cook the chicken breasts at 350 degrees for 30 minutes
- Increase the temperature to 400 degrees for the last 10 minutes
- They should look white when cut into and not “slimy”
- Boil the Rotini Pasta on High for up to 9 minutes
- When the pasta is firm (but not hard/soft), you are good to go
- Let the chicken and pasta cool down for about 10 minutes
- Add the cooked Rotini Pasta into a large bowl
- Add the chopped chicken breasts to your bowl
- Add the halved red cherry tomatoes to your bowl
- Add the sliced black olives to your bowl
- Add the two sliced cheeses to your bowl
- Add the mini pepperoni to your bowl
- Add the onions and peppers to your bowl
- Pour in your favorite Italian dressing
- Sprinkle on Parmesan cheese and add the parsley
- Evenly mix all of your ingredients with a spoon
- Taste it before serving and share it with love!
